Fiberglassing wooden surfboard fins help!?

hi, ive never glassed anything before in my life and this is for my year 12 major, i've got my teacher to supervise me but im not sure on how many layers of fiberglass i should use on each side of the fin. can anyone help me? and am i supposed to sand away some of the fibreglass and then do another layer?
